What is the bartender tip for a Gimlet?
The classic Gimlet was gin and lime cordial (Rose's); the modern version swaps the cordial for fresh juice and syrup, at 60/22/22. Lime is the drink — lemon makes it a different sour (the catalog's Fitzgerald, which also gets Angostura and is served on the rocks in a rocks glass). A London Dry holds up to the citrus; a very floral gin disappears. If the juice is very tart, add 5 ml of syrup. Chilled glass, no ice: a lukewarm Gimlet feels heavy. The Daiquiri is still the rum cousin; here the base is gin.
