What is the bartender tip for a Manhattan?
The IBA spec is rye, sweet vermouth, and a dash of Angostura — stirred, never shaken, into a chilled glass. Rye brings spice; bourbon makes it rounder and sweeter. Those 20 to 30 seconds of stirring are the dilution, the fourth ingredient. In the catalog, the Rabo de Galo is its Brazilian cousin: cachaça, vermouth, and Cynar instead of whiskey and bitters.
