What is the bartender tip for a Negroni Sour?

The base is the classic equal-parts Negroni; 10 ml of syrup is enough because the vermouth already sweetens — any more masks Campari's bitterness. The dry shake builds the foam before the ice chills the drink. A rocks glass with ice keeps the sour cold; a coupe works too, but the foam warms up faster. Behind the bar, use pasteurized egg white. The drops of bitters on the foam are an herbal touch for the aroma, not part of the recipe.
