What is the bartender tip for a Pimm's Cup?
Anders Erickson's video goes 60 ml Pimm's, 7.5 ml lemon, and ginger ale in a Collins, with a cucumber ribbon and strawberry — the New Orleans version. Ginger ale, not ginger beer: the beer's heat buries the botanicals. In the UK (BBC, Wimbledon) the lengthener is sparkling lemonade (Sprite or Lemon Fresh cover it). Slap the mint; don't muddle it. The catalog's Gin & Tonic is straight gin with quinine; the Hugo Spritz gets elderflower and prosecco. No extra gin in the glass: the Pimm's is already the fruit cup.
