What is the bartender tip for a El Presidente?
It's a rum Manhattan: stirred, in a coupe, no shaken citrus. Anders Erickson uses 45 ml white rum, 22 ml blanc vermouth, 7 ml dry curaçao, and a bar spoon of grenadine. Blanc vermouth (Dolin Blanc) is closest to what they drank in Havana; dry vermouth works if the rum is a little sweeter. Homemade or good store-bought grenadine — the dye-red kind just makes the glass pink. It's not a Mary Pickford (pineapple and maraschino, no vermouth) or a Daiquiri (shaken lime). Stir, don't shake.
