What is the bartender tip for a Hurricane?
Anders Erickson's go-to recipe is equal parts: 30 ml Jamaican rum, dark rum, passion fruit syrup, and lemon — a passion fruit daiquiri over ice, not Pat O'Brien's red premix. One rum covers it if it's a gold or dark with body; the Jamaican brings the funk. Store-bought passion fruit syrup works; pulp + 1:1 simple syrup does too. No orgeat and no curaçao — that turns it into a Mai Tai. The catalog's Piña Colada is coconut and pineapple. If you want the fruitier punch (A Bar Above), add orange juice, a bar spoon of grenadine, and swap part of the syrup for purée.
