What is the bartender tip for a Irish Coffee?
The IBA calls for Irish whiskey (Jameson, Tullamore D.E.W., or Bushmills): bourbon is too sweet and peated scotch fights the coffee. Brewed coffee, not espresso — espresso is too dense and runs over the spirit. The brown sugar raises the density so the cream floats; without sugar the cream sinks. Cold fresh cream, lightly whipped — no spray whipped cream, no Baileys. Don't stir once it's floated: the point is hot coffee through cold cream.
